  • 200 g mixed salad greens
  • 100 g radishes, thinly sliced
  • 150 g broccoli florets, blanched
  • 400 g canned black beans, drained and rinsed
  • 30 ml olive oil
  • 15 g za'atar spice blend
  • 10 g fresh parsley, chopped
  • Freshly cracked black pepper to taste
  • 50 g feta cheese, crumbled optional
  • 30 g walnuts, chopped optional

Method
 

  1. In a mixing bowl, combine the mixed salad greens, sliced radishes, and blanched broccoli florets. Toss to combine.

  3. Pour the za'atar dressing over the salad mixture and gently toss to coat all the ingredients evenly.
  4. Add the black beans to the salad, gently folding them in without mashing.
  5. Transfer the salad to a serving dish and garnish with fresh parsley and cracked black pepper, adding optional feta cheese or walnuts if desired.
