  • 200 g couscous
  • 400 g canned chickpeas, drained and rinsed
  • 150 g radishes, thinly sliced
  • 150 g green cabbage, shredded
  • 50 g fresh mint leaves, chopped
  • 3 tbsp tahini
  • 2 tbsp olive oil
  • Juice of 1 large lemon
  • Salt and pepper to taste
  • Lemon wedges for serving

Method
 

  1. In a medium pot, bring 250 ml of water to a boil. Remove from heat, add the couscous, cover, and let it steam for about 5 minutes, or until all liquid is absorbed. Fluff with a fork and set aside.
  2. In a mixing bowl, whisk together the tahini, olive oil, lemon juice, salt, and pepper until smooth and creamy. Adjust seasoning to your taste.
  3. In a large bowl, mix the drained chickpeas, sliced radishes, shredded cabbage, and chopped mint leaves. Drizzle with the tahini dressing and toss to coat everything evenly.
  4. To serve, place a generous portion of couscous in individual bowls. Top with the chickpea and vegetable mixture. Garnish with extra mint, lemon zest, and additional lemon wedges on the side.
