Tahini Lemon Chickpeas Couscous Bowl

- In a medium pot, bring 250 ml of water to a boil. Remove from heat, add the couscous, cover, and let it steam for about 5 minutes, or until all liquid is absorbed. Fluff with a fork and set aside.
- In a mixing bowl, whisk together the tahini, olive oil, lemon juice, salt, and pepper until smooth and creamy. Adjust seasoning to your taste.
- In a large bowl, mix the drained chickpeas, sliced radishes, shredded cabbage, and chopped mint leaves. Drizzle with the tahini dressing and toss to coat everything evenly.
- To serve, place a generous portion of couscous in individual bowls. Top with the chickpea and vegetable mixture. Garnish with extra mint, lemon zest, and additional lemon wedges on the side.
- Serve immediately and savor the wonderful blend of textures and flavors!
