  • 500 g chicken breast, diced
  • 1 tbsp olive oil
  • 2 tsp smoked paprika
  • 1 tsp chili powder

  • 1 head butter lettuce, leaves separated
  • 200 g pumpkin, peeled and cubed
  • 200 g eggplant, diced
  • fresh dill for garnish
  • 1 lime, cut into wedges
  • Sliced avocado optional
  • Chopped cilantro optional

  • 20 cm (8 inch) square baking tray
  • Chef's knife
  • Heatproof mixing bowl

Method
 

  1. Preheat your oven to 200°C (400°F). Arrange the cubed pumpkin and diced eggplant on a baking tray, drizzle with olive oil, and season with salt and pepper. Roast in the oven for about 20 minutes until tender and slightly caramelized.
  2. In a mixing bowl, combine the diced chicken breast with smoked paprika, chili powder, salt, and pepper. Mix well to coat the chicken in the spices.
