  • 4 large eggs 4 large eggs
  • 2 tbsp 2 tbsp za'atar spice
  • 150 g 150 g fresh peas (or frozen)
  • 100 g 100 g lettuce, chopped
  • 2 tbsp 2 tbsp olive oil
  • Salt and pepper, to taste
  • 4 slices 4 slices of crusty bread (e.g., sourdough or pita)
  • 2 tbsp 2 tbsp chopped fresh cilantro optional
  • 1 small 1 small chili pepper, finely chopped (for spice) optional

Method
 

  1. In a mixing bowl, whisk together the eggs, za'atar spice, salt, and pepper until well combined.
  2. Heat the olive oil in a medium skillet over medium heat. Add the peas and sauté for about 2-3 minutes until tender.
  3. Pour the egg mixture into the skillet with the peas, stirring gently to combine. Cook for 5-7 minutes, or until the eggs are just set but still creamy. Remove from heat.
  4. While the eggs are cooking, toast the bread slices in another skillet or toaster until golden brown.
  5. To serve, place the toasted bread on plates and spoon the za'atar egg mixture over the top.
  6. Garnish with chopped lettuce and sprinkle with fresh cilantro. Add chopped chili pepper if desired for an extra kick. Enjoy immediately!
