Mint Yogurt Black Beans Noodles Bento Box

- In a medium pot, bring salted water to a boil. Add the noodles and cook according to the package instructions until al dente. Drain and set aside.
- In the same pot, add a bit of olive oil and heat on medium. Toss in the peas and corn and sauté for about 3-4 minutes until heated through and slightly tender. Remove from heat.
- In a mixing bowl, combine the cooked black beans, noodles, peas, corn, chopped cilantro, and 1 tablespoon of olive oil. Squeeze the lemon juice over the mixture and season with salt and pepper to taste. Toss well to blend all ingredients.
- If making homemade mint yogurt, mix plain yogurt with finely chopped mint leaves and a little salt in a small bowl until well combined.
- Divide the noodle mixture between two bento boxes. Serve with a dollop of mint yogurt on the side and a lemon wedge for squeezing over the dish.
- Let the bento boxes sit for about 5 minutes before enjoying, allowing the flavors to meld together beautifully.

Whole grain or zoodles (zucchini noodles) can be used in place of standard noodles for a lighter option.
Experiment with different herbs like parsley or basil in the yogurt.
You can also add cubed cooked chicken or tofu for extra protein!
