Ingredients
  

  • 150 g black beans, cooked and drained
  • 150 g noodles (whole grain or rice noodles)
  • 100 g frozen peas
  • 100 g corn, canned or frozen
  • 30 g fresh cilantro, chopped
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste
  • 100 g mint yogurt (store-bought or homemade) optional
  • Lemon wedges for serving optional

Method
 

  1. In a medium pot, bring salted water to a boil. Add the noodles and cook according to the package instructions until al dente. Drain and set aside.
  2. In the same pot, add a bit of olive oil and heat on medium. Toss in the peas and corn and sauté for about 3-4 minutes until heated through and slightly tender. Remove from heat.
  3. In a mixing bowl, combine the cooked black beans, noodles, peas, corn, chopped cilantro, and 1 tablespoon of olive oil. Squeeze the lemon juice over the mixture and season with salt and pepper to taste. Toss well to blend all ingredients.
  4. If making homemade mint yogurt, mix plain yogurt with finely chopped mint leaves and a little salt in a small bowl until well combined.
  5. Divide the noodle mixture between two bento boxes. Serve with a dollop of mint yogurt on the side and a lemon wedge for squeezing over the dish.
  6. Let the bento boxes sit for about 5 minutes before enjoying, allowing the flavors to meld together beautifully.
