- Add minced garlic and sauté for 1–2 minutes until fragrant, being careful not to burn.
- Increase the heat and add the sliced beef sirloin, stirring until browned, about 5–7 minutes.
- Season the beef with black pepper and soy sauce, cooking for an additional 3 minutes for flavor.
- In the same pan, add the diced eggplant, stirring until soft and tender, about 5 minutes.
- Once the rice is cooked, fluff it with a fork and place a generous serving on each plate.
- Spoon the peppered beef mixture over the rice, and arrange the chopped lettuce around the plate for color and crunch.
