Ingredients

  • 200 g canned black beans
  • 1 medium zucchini
  • 100 g radishes
  • 2 large lettuce leaves (for the wraps)
  • 15 ml olive oil
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • Juice of 1 lime
  • Fresh cilantro, chopped optional
  • Sliced avocado optional

Equipment

  • Flatbread pan (e.g., tawa or cast iron skillet)
  • Heatproof mixing bowl
  • Chef's knife
  • Cutting board
  • Measuring spoons

Method

  1. In a mixing bowl, combine the black beans, sliced zucchini, radishes, olive oil, black pepper, garlic powder, salt, and lime juice. Mix well until all ingredients are coated.
  2. Heat a skillet over medium heat. Once hot, add the black bean mixture to the skillet and cook for about 10 minutes, stirring occasionally, until the zucchini is tender and everything is heated through.
  3. While the mixture cooks, prepare the lettuce leaves as wraps.
  4. Once the mixture is ready, remove it from the heat and let it rest for 5 minutes.
  5. Spoon the warm black bean and zucchini mixture into the prepared lettuce leaves, neatly folding them into wraps.
  6. Serve immediately, garnished with optional cilantro or avocado if desired, and alongside a simple salad and lime wedge.
