  • 50 g unsweetened cocoa powder
  • 60 ml water
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 100 g dark chocolate, chopped (70% cocoa or higher)
  • 100 g fresh berries (e.g., raspberries, strawberries, or blueberries) optional

Method
 

  1. Preheat your oven to 180°C (350°F). Line a baking tray with parchment paper and set aside.
  2. In a saucepan, combine sugar, cocoa powder, water, and salt over medium heat. Stir until the mixture comes to a gentle boil, then reduce to a simmer.
  3. Add in the sesame seeds and vanilla extract, stirring well to combine. Cook for an additional 5–7 minutes, stirring frequently until the mixture thickens slightly.
  4. Remove the saucepan from heat and pour the mixture onto the prepared baking tray. Spread it evenly with a spatula and let it rest for about 15 minutes until it sets.
  5. Once cooled, melt the dark chocolate in a bowl over a water bath or microwave in short bursts. Drizzle the melted chocolate over the sesame brittle.
  6. While the chocolate is still soft, scatter fresh berries on top, gently pressing them in. Allow the brittle to cool completely for another 15 minutes.
  7. Once set, cut the brittle into neat pieces with a sharp knife.
  8. If desired, sprinkle a little flaked sea salt on top before serving.
