Classic Chocolate Sesame Brittle with Berries

- Preheat your oven to 180°C (350°F). Line a baking tray with parchment paper and set aside.
- In a saucepan, combine sugar, cocoa powder, water, and salt over medium heat. Stir until the mixture comes to a gentle boil, then reduce to a simmer.
- Add in the sesame seeds and vanilla extract, stirring well to combine. Cook for an additional 5–7 minutes, stirring frequently until the mixture thickens slightly.
- Remove the saucepan from heat and pour the mixture onto the prepared baking tray. Spread it evenly with a spatula and let it rest for about 15 minutes until it sets.
- Once cooled, melt the dark chocolate in a bowl over a water bath or microwave in short bursts. Drizzle the melted chocolate over the sesame brittle.
- While the chocolate is still soft, scatter fresh berries on top, gently pressing them in. Allow the brittle to cool completely for another 15 minutes.
- Once set, cut the brittle into neat pieces with a sharp knife.
- If desired, sprinkle a little flaked sea salt on top before serving.
