Ingredients
  

  • 500 g 500 g puff pastry
  • 200 g 200 g cream cheese, softened
  • 100 g 100 g powdered sugar
  • 2 tsp 2 tsp ground cardamom
  • 1 large 1 large egg (for egg wash)
  • 200 g 200 g mixed fresh berries (e.g., strawberries, blueberries, raspberries)
  • 1 tsp 1 tsp vanilla extract
  • Zest of 1 lemon
  • Extra powdered sugar for dusting optional
  • Chopped pistachios for garnish optional

  • Food processor or plastic bag & rolling pin (for biscuits)

Method
 

  1. Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper.
  2. In a mixing bowl, combine the softened cream cheese, powdered sugar, ground cardamom, vanilla extract, and lemon zest. Mix until smooth and creamy.
  3. On a lightly floured surface, roll out the puff pastry into a large rectangle (approximately 5mm thick). Cut it into squares, about 10 cm x 10 cm.
  4. Place a generous spoonful of the cream cheese filling in the center of each pastry square. Fold the corners towards the center to create an envelope shape. Seal the edges with a fork.
  5. Beat the egg and brush a thin layer over each pastry for a golden finish.
  6. Place the pastries on the prepared baking tray and bake for 20-25 minutes, or until they are golden brown and flaky.
  7. Once baked, allow the pastries to cool for 5 minutes before topping with an assortment of fresh berries. Dust with powdered sugar or sprinkle with chopped pistachios if desired.
