Creamy Honey Sesame Date Bars with Apple Compote

- Preheat your oven to 180°C (350°F). Line a baking tray with parchment paper.
- In a food processor, combine the pitted dates, almond butter, oats, honey, sesame seeds, cocoa powder, vanilla extract, and salt. Pulse until the mixture is well combined and has a sticky consistency.
- Pour the mixture into the lined baking tray, pressing it out evenly with a spatula. Bake for 20-25 minutes, or until set and slightly firm to touch.
- While the bars are baking, prepare the apple compote. In a saucepan, combine 3 peeled, cored, and diced apples with 2 tbsp honey, a pinch of salt, and a sprinkle of cinnamon. Cook over medium heat for about 10-15 minutes until apples are tender and syrupy.
- Once the bars are done, remove them from the oven and let them rest in the tray for 15 minutes before transferring them to a wire rack to cool completely.
- Once cooled, cut into neat squares or rectangles. Serve each piece with a generous spoonful of apple compote on top. Garnish with additional sesame seeds, if desired.
