Ingredients
  

  • 250 g pitted dates
  • 150 g almond butter
  • 100 g rolled oats
  • 60 g honey
  • 50 g sesame seeds
  • 40 g unsweetened cocoa powder
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • Additional sesame seeds for garnish optional
  • Cinnamon for flavoring the apple compote optional

Method
 

  1. Preheat your oven to 180°C (350°F). Line a baking tray with parchment paper.
  2. In a food processor, combine the pitted dates, almond butter, oats, honey, sesame seeds, cocoa powder, vanilla extract, and salt. Pulse until the mixture is well combined and has a sticky consistency.
  3. Pour the mixture into the lined baking tray, pressing it out evenly with a spatula. Bake for 20-25 minutes, or until set and slightly firm to touch.
  4. While the bars are baking, prepare the apple compote. In a saucepan, combine 3 peeled, cored, and diced apples with 2 tbsp honey, a pinch of salt, and a sprinkle of cinnamon. Cook over medium heat for about 10-15 minutes until apples are tender and syrupy.
  5. Once the bars are done, remove them from the oven and let them rest in the tray for 15 minutes before transferring them to a wire rack to cool completely.
  6. Once cooled, cut into neat squares or rectangles. Serve each piece with a generous spoonful of apple compote on top. Garnish with additional sesame seeds, if desired.
