Crunchy Apple Caramel Chews with Date Caramel

- In a medium saucepan, combine the apple puree, granulated sugar, unsalted butter, corn syrup, vanilla extract, ground cinnamon, and salt.
- Cook the mixture over medium heat, stirring frequently until it comes to a boil.
- Once boiling, continue to cook for 8–10 minutes, or until the mixture reaches a soft ball stage (about 115°C / 240°F if using a candy thermometer).
- Remove from heat and stir in the rice cereal until well combined.
- Pour the mixture into a lined baking tray and spread it evenly with a spatula.
- Allow the mixture to cool for about 30 minutes at room temperature until it’s set but still slightly pliable.
- While waiting, prepare the date caramel by pureeing 100 g of pitted Medjool dates with 2 tbsp of water until smooth.
- Spread the date caramel over the cooled apple chews.
- Cut into neat squares once fully set (about 30 minutes more).
- Optionally, garnish with a sprinkle of crushed nuts or sea salt before serving.
