  • 200 g apple puree
  • 150 g granulated sugar
  • 100 g unsalted butter
  • 100 g light corn syrup
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 100 g rice cereal
  • Crushed nuts for garnish optional
  • Sea salt for garnish optional

Method
 

  1. In a medium saucepan, combine the apple puree, granulated sugar, unsalted butter, corn syrup, vanilla extract, ground cinnamon, and salt.
  2. Cook the mixture over medium heat, stirring frequently until it comes to a boil.
  3. Once boiling, continue to cook for 8–10 minutes, or until the mixture reaches a soft ball stage (about 115°C / 240°F if using a candy thermometer).
  4. Remove from heat and stir in the rice cereal until well combined.
  5. Pour the mixture into a lined baking tray and spread it evenly with a spatula.
  6. Allow the mixture to cool for about 30 minutes at room temperature until it’s set but still slightly pliable.
  7. While waiting, prepare the date caramel by pureeing 100 g of pitted Medjool dates with 2 tbsp of water until smooth.
  8. Spread the date caramel over the cooled apple chews.
  9. Cut into neat squares once fully set (about 30 minutes more).
  10. Optionally, garnish with a sprinkle of crushed nuts or sea salt before serving.
