Ingredients
  

  • 3 approximately 400 g ripe bananas
  • 100 g granulated sugar
  • 60 g unsalted butter
  • 2 large eggs
  • 1 tsp vanilla extract
  • 200 g all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cumin
  • 1 Zest of lime
  • 2 tbsp lime juice
  • 1/2 tsp salt
  • 50 g Chopped walnuts optional
  • 50 g Chopped dark chocolate optional

Method
 

  1. Preheat your oven to 180°C (350°F). Grease a muffin tin or line with paper liners.
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Add the sugar and softened butter to the mashed bananas, and mix until well combined.
  4. Beat in the eggs, one at a time, followed by the vanilla extract.
  5. In another bowl, whisk together the flour, baking powder, baking soda, ground cumin, and salt.
  6. Gradually add the dry ingredients to the banana mixture, stirring just until combined.
  7. Fold in the lime zest and lime juice until evenly distributed. If desired, add chopped walnuts or dark chocolate chunks.
  8. Divide the batter evenly into the muffin tin, filling each cup about 3/4 full.
  9. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean and the muffins are lightly golden.
  10. Remove from the oven and let cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
