  • 4 pita breads

Method
 

  1. Preheat your oven to 180°C (350°F).

  3. Gently mix the ingredients until everything is well coated. If you prefer a smoother texture, feel free to blend half of the mixture until creamy.
  4. Spread the black bean mixture evenly over the pita breads in a baking dish.
  5. Bake in the preheated oven for 20-25 minutes or until the eggplant is tender and the edges of the pita are slightly crispy.
