  • 250 g whole grain noodles
  • 100 g fresh spinach
  • 150 g green peas (frozen if you prefer)
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tbsp olive oil
  • Juice of 1 lime
  • Salt and cracked black pepper to taste
  • 4 sprigs fresh mint, chopped
  • Sliced scallions for garnish optional

Method
 

  1. In a large pot of boiling salted water, cook the whole grain noodles according to package instructions until al dente. Drain and set aside.
  2. In a frying pan over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for 1 minute until fragrant.
  3. Add the ground turkey to the pan, breaking it into smaller pieces. Stir in the ground cumin, salt, and cracked black pepper. Cook for about 5-7 minutes until browned and fully cooked.
  4. Add in the spinach and green peas, cooking for an additional 2-3 minutes until the spinach has wilted and the peas are heated through.
  5. Add the cooked noodles and lime juice to the turkey mixture. Stir well to combine all the ingredients and adjust seasoning if necessary.
  6. Divide the turkey noodle mixture evenly among four bowls, topping with fresh mint and additional cracked black pepper if desired. Enjoy!
