- In a large pot of boiling salted water, cook the whole grain noodles according to package instructions until al dente. Drain and set aside.
- In a frying pan over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for 1 minute until fragrant.
- Add the ground turkey to the pan, breaking it into smaller pieces. Stir in the ground cumin, salt, and cracked black pepper. Cook for about 5-7 minutes until browned and fully cooked.
- Add in the spinach and green peas, cooking for an additional 2-3 minutes until the spinach has wilted and the peas are heated through.
- Add the cooked noodles and lime juice to the turkey mixture. Stir well to combine all the ingredients and adjust seasoning if necessary.
- Divide the turkey noodle mixture evenly among four bowls, topping with fresh mint and additional cracked black pepper if desired. Enjoy!
