  • 200 g baby spinach
  • 150 g ripe tomatoes, diced
  • 200 g green cabbage, finely shredded
  • 4 large eggs
  • 2 tbsp curry powder
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • Fresh parsley, for garnish
  • Lime wedges, for serving
  • 100 g Sliced cucumber optional
  • 50 g Chopped red onion optional
  • 100 g Avocado slices optional

Method
 

  1. Place the eggs in a pot of water and bring to a boil. Once boiling, let simmer for 8-10 minutes for hard-boiled eggs. After cooking, immerse in cold water for 5 minutes. Peel and set aside.
  2. In a large mixing bowl, combine the baby spinach, diced tomatoes, and shredded green cabbage.
  3. In a small bowl, whisk together the olive oil, curry powder, salt, and pepper until well mixed.
  4. Drizzle the curry dressing over the salad and toss gently to coat all the vegetables evenly.
