Ingredients
  

  • 200 g red lentils
  • 150 g green beans, trimmed and cut into 2 cm pieces
  • 150 g corn (fresh or frozen)
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tbsp curry powder
  • 1 tsp turmeric powder
  • 400 ml vegetable broth
  • 4 large whole wheat wraps
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • Lemon wedges for serving optional
  • Handful of fresh cilantro, chopped optional

Method
 

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic, curry powder, and turmeric powder, cooking for an additional minute until fragrant.
  3. Add the lentils and vegetable broth to the pot. Bring to a boil, then reduce heat to low and simmer for 15 minutes, stirring occasionally.
  4. Once the lentils are tender, mix in the green beans and corn. Cook for another 5 minutes until the green beans are bright and slightly tender. Season with salt and pepper to taste.
  5. Remove from heat and let the mixture rest for 5 minutes to cool slightly.
  6. Place a generous amount of the lentil mixture in the center of each whole wheat wrap, fold in the sides, and roll up tightly.
  7. Serve the wraps cut in half with a simple side salad and lemon wedges. Enjoy!
