Ingredients

  • 200 g all-purpose flour
  • 80 g unsweetened cocoa powder
  • 100 g granulated sugar
  • 200 g shelled pistachios, finely ground
  • 50 g unsalted butter, melted
  • 2 large eggs
  • 200 ml whole milk
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 50 g sesame seeds (for crunch, toasted)
  • Chocolate sauce (for drizzling) optional
  • Whipped cream or vanilla ice cream optional

Equipment

  • Heatproof mixing bowl
  • Deep frying pot
  • Slotted spoon
  • 20 cm (8 inch) square baking tray
  • Chef's knife
  • Candy thermometer (for precise oil temperature)

Method

  1. In a mixing bowl, combine the ground pistachios, flour, cocoa powder, sugar, baking powder, and salt. Whisk to blend the dry ingredients.
  2. In another bowl, whisk together the eggs, melted butter, and whole milk until well combined.
  3. Gradually pour the wet mixture into the dry ingredients, stirring until a thick batter forms. Let the batter rest for about 10 minutes.
  4. While resting, heat oil in a deep frying pot over medium heat, about 180°C (350°F).
  5. Once the oil is hot, carefully drop spoonfuls of batter into the oil, allowing for space between fritters. Fry until golden brown, approximately 3–4 minutes per side, or until they puff up.
  6. Using a slotted spoon, remove the fritters from the oil and let them drain on a baking tray lined with paper towels.
  7. While still warm, sprinkle the fritters with toasted sesame seeds for added crunch.
  8. Serve warm, garnished with your choice of drizzled chocolate or whipped cream.
