Ingredients
  

  • 500 g beef (ground or diced)
  • 300 g sweet potatoes, peeled and diced
  • 150 g cauliflower florets
  • 150 g fresh spinach
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp paprika
  • to taste Salt and black pepper
  • 200 g cooked brown rice
  • Fresh cilantro for garnish
  • 3 tbsp tahini
  • Lemon wedges for serving optional
  • Chili flakes for extra heat optional

Method
 

  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until it becomes translucent.
  2. Stir in the minced garlic and paprika, cooking for another 1–2 minutes until fragrant.
  3. Increase the heat to medium-high and add the beef, seasoning with salt and pepper. Cook until the beef is browned and cooked through, approximately 8–10 minutes.
  4. While the beef is cooking, in a separate saucepan, boil salted water and add the diced sweet potatoes and cauliflower. Cook for about 10–12 minutes, or until tender. Drain and set aside.
  5. Add the cooked sweet potatoes and cauliflower to the beef mix, stirring gently to combine. Cook for another 3–4 minutes.
  6. Fold in the fresh spinach until wilted, then remove from heat.
  7. To serve, spoon a portion of brown rice onto each plate, top with the beef and vegetable mixture, and finish with a drizzle of tahini and a sprinkle of fresh cilantro. Optionally, serve with lemon wedges and chili flakes for added flavor.
