Ingredients
  

  • 500 g beef sirloin, thinly sliced
  • 2 tbsp harissa paste
  • 4 small tortillas (approximately 20 cm each)
  • 200 g asparagus, trimmed and cut into 5 cm pieces
  • 1 ripe avocado, sliced
  • 50 g fresh mint leaves, roughly chopped
  • 2 tbsp olive oil
  • 1 tsp cracked black pepper
  • to taste Salt
  • (for garnish) crumbled feta cheese optional
  • (for serving) lime wedges optional

Method
 

  1. In a mixing bowl, combine the sliced beef with harissa paste, olive oil, and a pinch of salt. Allow it to marinate for at least 10 minutes.
  2. In a large skillet, heat a splash of olive oil over medium-high heat.
  3. Add the marinated beef to the skillet, cooking for 4-5 minutes until browned and cooked to your desired level of doneness. Remove the beef from the skillet and set aside.
  4. In the same skillet, add the asparagus pieces. Sauté them for about 3-4 minutes until they are tender-crisp.
  5. Heat the tortillas in a dry skillet or microwave for a few seconds until warm.
  6. To assemble, place a tortilla in each bowl. Top with sautéed asparagus, the seasoned beef, and slices of avocado.
  7. Finish with a sprinkle of fresh mint and cracked black pepper. Serve with lime wedges and feta cheese, if using. Enjoy!
