Ingredients
  

  • 200 g all-purpose flour
  • 100 g unsalted butter, softened
  • 100 g brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp baking powder
  • 200 g stroop (Dutch syrup)
  • 50 g sesame seeds, toasted optional
  • a pinch sea salt optional
  • optional Whipped cream for serving optional

Method
 

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
  3. Add the eggs, one at a time, along with the vanilla extract, mixing well after each addition.
  4. In a separate bowl, combine the flour, ground cinnamon, and baking powder. Gradually add this dry mixture to the wet mixture, stirring until well blended.
  5. Chill the dough in the refrigerator for about 30 minutes to firm up.
  6. Roll out the dough on a floured surface to about 0.5 cm thickness. Cut into desired shapes with your cookie cutter or a knife.
  7. Bake on a lined baking tray for 10 minutes or until golden brown.
  8. Allow cookies to cool slightly, then sandwich with stroop and sprinkle with toasted sesame seeds before serving.
  9. For a delightful finish, serve with a dollop of whipped cream and a light sprinkle of sea salt on top.
