- Preheat your oven to 180°C (350°F).
- In a mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
- Add the eggs, one at a time, along with the vanilla extract, mixing well after each addition.
- In a separate bowl, combine the flour, ground cinnamon, and baking powder. Gradually add this dry mixture to the wet mixture, stirring until well blended.
- Chill the dough in the refrigerator for about 30 minutes to firm up.
- Roll out the dough on a floured surface to about 0.5 cm thickness. Cut into desired shapes with your cookie cutter or a knife.
- Bake on a lined baking tray for 10 minutes or until golden brown.
- Allow cookies to cool slightly, then sandwich with stroop and sprinkle with toasted sesame seeds before serving.
- For a delightful finish, serve with a dollop of whipped cream and a light sprinkle of sea salt on top.
