- In a double boiler or microwave-safe bowl, melt the chopped dark chocolate and unsalted butter together until smooth. If using a microwave, heat in 30-second intervals, stirring until fully melted.
- Once melted, remove from heat and stir in the powdered sugar, lemon zest, dried basil, dried thyme, sea salt, and vanilla extract until combined and smooth.
- Pour the mixture into silicone molds or drop spoonfuls onto parchment paper, shaping them into bite-sized pieces with a spatula.
- Place the molds or parchment on a flat surface in the fridge for at least 30 minutes, or until the bites are set and firm to the touch.
- Once set, remove from molds or peel off the parchment. If desired, sprinkle with additional lemon zest or sea salt before serving.
