Ingredients

  • 200 g pitted Medjool dates
  • 150 g rolled oats
  • 100 g tahini
  • 80 g sesame seeds
  • 2 tsp ground cardamom
  • 50 g honey (or maple syrup for a vegan option)
  • 1/4 tsp salt
  • 60 ml water
  • Fresh apple slices for garnish optional
  • Additional sesame seeds for topping optional

Equipment

  • Heatproof mixing bowl
  • Baking dish (20cm x 20cm)
  • Blender or food processor
  • Chef's knife
  • Baking tray lined with parchment paper

Method

  1. Preheat your oven to 180°C (350°F). Line the baking dish with parchment paper for easy removal.
  2. In a food processor, combine pitted dates, tahini, honey, and water. Process until smooth.
  3. In a mixing bowl, blend the rolled oats, sesame seeds, ground cardamom, and salt.
  4. Pour the date mixture into the bowl with dry ingredients and mix thoroughly until all are well combined.
  5. Transfer the mixture to the prepared baking dish, pressing it down firmly into an even layer.
  6. Bake in the preheated oven for 25 minutes until golden brown.
  7. Allow the bars to cool in the baking dish for 30 minutes before cutting into neat pieces.
  8. While the bars are cooling, prepare the apple compote by cooking diced apples in a small pot with a bit of water over low heat until soft, about 10 minutes. Sweeten if desired.
  9. Serve the bars topped with warm apple compote and a sprinkle of fresh apple slices. Enjoy!
