Ingredients
  

  • 150 g all-purpose flour
  • 50 g unsweetened cocoa powder
  • 100 g granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 75 g unsalted butter, softened
  • 1 large egg
  • 100 ml low-fat milk
  • 150 g mixed fresh berries (strawberries, blueberries, raspberries) optional
  • Dusting of powdered sugar for garnish optional

Method
 

  1. Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.
  2. In a mixing bowl, combine the flour, cocoa powder, baking powder, baking soda, and salt. Whisk thoroughly to mix the dry ingredients.
  3. In another bowl, cream together the softened butter and sugar until light and fluffy. This should take about 3-4 minutes.
  4. Add the egg to the butter mixture and mix until well combined, followed by the milk.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Avoid overmixing to ensure your biscuits stay light and airy.
  6. Using a spoon or a piping bag, drop spoonfuls of the cookie batter onto the prepared baking tray, leaving space in between for spreading.
  7. Bake in the preheated oven for 15-20 minutes or until the edges are set but the center is slightly soft. A toothpick inserted should come out with a few moist crumbs.
  8. Allow the biscuits to cool on the tray for about 10 minutes, then transfer to a cooling rack.
  9. Once cooled, top with fresh mixed berries and sprinkle with powdered sugar for garnishing, if desired.
