Mediterranean Cod Sandwich with Mushrooms

- Steam the broccoli florets for about 5 minutes until bright green and tender. Set aside.
- In a frying pan, heat 25 ml of olive oil over medium heat. Season the cod with paprika and freshly ground black pepper. Once the oil is hot, add the cod fillets and cook for 4–5 minutes on each side until golden and cooked through. Remove from the pan and flake into large pieces.
- In the same pan, add the remaining olive oil and sauté the sliced mushrooms for 4–5 minutes until they are tender and slightly caramelized. Add the minced garlic and cook for an additional 1 minute until fragrant.
- In a mixing bowl, gently combine the flaked cod, sautéed mushrooms, steamed broccoli, lemon juice, and oregano. Mix well to coat everything in the delicious Mediterranean flavor.
- Slice the whole-grain rolls in half. Spoon the cod mixture generously onto the bottom half of each roll. Optional: use a sandwich press to warm until the rolls are slightly toasted, about 2–3 minutes.
- Top with a drizzle of tahini and garnish with fresh parsley. Serve each sandwich with a simple side salad dressed lightly with olive oil.
