Ingredients

  • 400 g ground turkey
  • 1 tbsp curry powder
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 4 whole wheat hot dog buns
  • 2 tbsp olive oil
  • 200 g mixed salad greens (e.g. arugula, spinach) optional
  • 1 large tomato, diced optional
  • ½ cucumber, sliced optional
  • 50 g red onion, thinly sliced optional
  • 100 g yogurt or sour cream (for serving) optional

Equipment

  • Large mixing bowl
  • Grill or skillet
  • Chef's knife
  • Cutting board

Method

  1. In a mixing bowl, combine the ground turkey, curry powder, paprika, garlic powder, onion powder, salt, and black pepper. Mix well until combined.
  2. Shape the turkey mixture into sausage links, about the size of hot dogs.
  3. Heat the olive oil in a grill or skillet over medium heat. Cook the sausages for about 12-15 minutes, turning occasionally, until they are browned and reach an internal temperature of 75°C (165°F).
  4. While the sausages are cooking, prepare the salad by tossing the mixed greens, diced tomato, cucumber, and red onion together in a bowl.
  5. Once the sausages are done, let them rest for 5 minutes before serving.
  6. Serve the sausages in whole wheat buns topped with a generous spoonful of yogurt or sour cream alongside the fresh salad.
