Mini Apple Sesame Date Bars with Coconut Flakes

- Preheat your oven to 180°C (350°F). Line the baking pan with parchment paper, leaving some overhang for easy removal.
- In a food processor, blend the pitted dates until they form a sticky paste. If it's too sticky, add a small amount of water to help achieve the right consistency.
- In a mixing bowl, combine the blended dates with rolled oats, sesame seeds, grated apple, maple syrup, vanilla extract, salt, and optional nuts and cinnamon if using. Mix until well combined.
- Transfer the mixture into the prepared baking pan, pressing down firmly to create an even layer. Use a spatula to smooth the top.
- Sprinkle the coconut flakes evenly over the top.
- Bake in the preheated oven for 25 minutes, or until the edges are slightly golden. You'll know they're done when you can poke them with a toothpick and it comes out mostly clean.
- Allow the bars to cool in the pan for at least 10 minutes before lifting them out using the parchment paper. Cut into mini squares or rectangles.
- Serve neat, and enjoy your wholesome dessert!
