Mini Sesame Brittle with Yogurt Cream

- Line a baking sheet with parchment paper and set it aside.
- In a dry skillet over medium heat, toast the sesame seeds for about 3-4 minutes, stirring frequently until golden brown. Remove from heat.
- In a saucepan, combine granulated sugar, water, and salt. Cook over medium heat until the sugar dissolves, then increase the heat and bring to a boil until the mixture reaches a light golden color (hard crack stage around 150°C / 300°F), approximately 8-10 minutes.
- Remove the saucepan from heat and quickly stir in the toasted sesame seeds and butter until fully coated.
- Pour the mixture onto the prepared baking sheet and spread it evenly with a spatula. Allow it to cool for about 30 minutes or until set.
- In a mixing bowl, whisk the plain yogurt and honey (or maple syrup) together until smooth.
- Once cooled, cut the sesame brittle into small bite-sized pieces.
- Plate the mini brittles with a dollop of yogurt cream and garnish with fresh mint leaves if desired.
