Ingredients
  

  • 200 g white sesame seeds
  • 150 g granulated sugar
  • 60 ml water
  • 1 tbsp unsalted butter
  • 1/4 tsp salt
  • 200 ml plain yogurt optional
  • 2 tbsp honey or maple syrup optional
  • (for garnish) Fresh mint leaves optional

Method
 

  1. Line a baking sheet with parchment paper and set it aside.
  2. In a dry skillet over medium heat, toast the sesame seeds for about 3-4 minutes, stirring frequently until golden brown. Remove from heat.
  3. In a saucepan, combine granulated sugar, water, and salt. Cook over medium heat until the sugar dissolves, then increase the heat and bring to a boil until the mixture reaches a light golden color (hard crack stage around 150°C / 300°F), approximately 8-10 minutes.
  4. Remove the saucepan from heat and quickly stir in the toasted sesame seeds and butter until fully coated.
  5. Pour the mixture onto the prepared baking sheet and spread it evenly with a spatula. Allow it to cool for about 30 minutes or until set.
  6. In a mixing bowl, whisk the plain yogurt and honey (or maple syrup) together until smooth.
  7. Once cooled, cut the sesame brittle into small bite-sized pieces.
  8. Plate the mini brittles with a dollop of yogurt cream and garnish with fresh mint leaves if desired.
