  • 2 medium eggplants
  • 8 slices whole grain bread
  • 4 radishes
  • 200 g plain yogurt
  • 1 bunch fresh mint
  • 2 tbsp tahini

Method
 

  1. Preheat your oven to 200°C (400°F). Spread the diced eggplant on a baking tray, drizzle with olive oil, and season with salt and pepper. Roast for 20 minutes or until golden and tender.
  2. In a skillet over medium heat, brown the ground lamb for about 5-7 minutes, breaking it up with a spatula, until fully cooked. Season with salt and pepper to taste.
  3. In a mixing bowl, combine the plain yogurt, chopped mint, and a pinch of salt. Mix until well incorporated.
  4. Toast the slices of bread lightly. On four slices, layer the cooked lamb, roasted eggplant, and radish slices. Add a generous spoonful of the mint yogurt sauce on top.
