  • 200 g Medjool dates, pitted
  • 100 g raw almonds
  • 50 g walnuts
  • 30 g cocoa powder
  • 2 tsp instant coffee granules
  • 1 tbsp maple syrup
  • 1/4 tsp sea salt
  • Unsweetened shredded coconut optional
  • Chopped pistachios optional
  • Extra yogurt for drizzling optional

Method
 

  1. Start by placing the pitted Medjool dates, raw almonds, walnuts, cocoa powder, instant coffee granules, maple syrup, and sea salt into a food processor.
  2. Pulse the ingredients together until they form a sticky, dough-like consistency. Be careful not to over-process; you want some texture from the nuts.
  3. Line a baking sheet with parchment paper.
  4. Scoop out about 1 tablespoon of the mixture and roll it into a ball. Place the ball onto the prepared baking sheet. Repeat until all the mixture is used, placing the bites about an inch apart.
  5. Refrigerate the candy bites for at least 30 minutes to set.
  6. While the bites are chilling, prepare the yogurt cream by mixing together yogurt and a touch of maple syrup in a bowl. Adjust sweetness to taste.
  7. Once chilled, serve the candy bites drizzled or dipped in yogurt cream and optionally topped with shredded coconut or chopped pistachios.
