  • 150 g all-purpose flour
  • 200 g granulated sugar
  • 50 g unsweetened cocoa powder
  • 1 tsp ground cardamom
  • 1/2 tsp salt
  • 115 g unsalted butter, melted
  • 2 large eggs
  • 1 tsp vanilla extract
  • 75 g shredded coconut
  • Chopped walnuts or pecans optional
  • Extra coconut flakes optional

Method
 

  1. Preheat your oven to 180°C (350°F) and grease or line your baking pan.
  2. In a large mixing bowl, combine the flour, sugar, cocoa powder, cardamom, and salt. Whisk together until well blended.
  3. Make a well in the center and add the melted butter, eggs, and vanilla extract. Mix until just combined, showing a slightly lumpy batter.
  4. Fold in the shredded coconut gently until evenly distributed.
  5. Pour the batter into the prepared baking pan, spreading it evenly.
