Ingredients
  

  • 250 g all-purpose flour
  • 60 g unsalted butter, melted
  • 100 g granulated sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ½ tsp salt
  • 1 large egg
  • 120 g grated carrot
  • 60 ml milk
  • 100 g fruit jam (your choice for topping, such as raspberry or apricot)
  • Powdered sugar for garnish optional
  • Chopped nuts or raisins optional

Method
 

  1. Preheat your oven to 190°C (375°F) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the flour, melted butter, granulated sugar, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt. Stir until well mixed.
  3. Add the egg, grated carrot, and milk to the dry ingredients. Mix together until a soft dough forms, ensuring not to overmix.
  4. On a floured surface, roll out the dough to about 0.5 cm thick. Cut into 10 cm circles using a pastry cutter or knife.
  5. Place a spoonful of fruit jam on one half of each circle and fold the other half over to create a semi-circle. Press the edges to seal. Crimp with a fork for a decorative touch.
  6. Place the hand pies on the prepared baking sheet. Bake in the preheated oven for 20–25 minutes, until golden brown.
  7. Allow to cool slightly before serving. Dust with powdered sugar if desired.
