Method
 

  1. In a mixing bowl, combine the chopped dark chocolate and granulated sugar.
  2. In a saucepan over medium heat, gently warm the whole milk, heavy cream, and salt until just simmering, stirring occasionally.
  3. Pour the warm milk mixture over the chocolate and sugar, whisking until the chocolate is completely melted and smooth.
  4. In a small separate bowl, whisk the egg yolks. Slowly add a ladleful of the warm chocolate mixture to the yolks while whisking to temper them, then return the yolk mixture to the saucepan.
  5. Continue cooking over low heat, stirring continuously, until the mixture thickens and coats the back of a spoon (about 4-5 minutes). Do not boil.
  6. Remove from heat and stir in vanilla extract. Allow the mix to cool at room temperature for about 15 minutes.
  7. Once cooled, pour the mixture into your ice cream maker and churn according to the manufacturer’s instructions. If you don’t have an ice cream maker, place the mixture in a suitable container and freeze, stirring every 30 minutes for about 3-4 hours until solid.
