  • 200 g all-purpose flour
  • 75 g cornstarch
  • 150 g pitted dates, chopped
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 100 g fruit jam (such as raspberry or apricot) optional

Method
 

  1. Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.
  2. In a mixing bowl, cream the softened butter and powdered sugar together until light and fluffy, about 3-4 minutes.
  3. In a separate bowl, whisk together the all-purpose flour, cornstarch, and salt. Gradually incorporate this dry mixture into the butter-sugar mixture until a dough forms.
  4. Fold in the chopped dates and vanilla extract until evenly distributed throughout the dough.
  5. Turn the dough out onto a floured surface and roll it out to about 1 cm thick. Cut into neat squares or rectangles and place them on the prepared baking tray.
  6. Bake in the preheated oven for 20-25 minutes until the edges are lightly golden.
  7. Let the cookies cool on a wire rack for 10 minutes. Once cooled, spread a thin layer of fruit jam on top of each cookie.
  8. Garnish with chopped nuts if desired before serving.
