- In a mixing bowl, combine the olive oil, minced garlic, oregano, paprika, cumin, salt, and black pepper to create a marinade. Toss the pork cubes in this mixture, ensuring they are well-coated.
- Place the marinated pork in a slow cooker, and add the chicken broth. Stir gently to combine.
- Cover and cook on low for about 4 hours, or until the pork is tender and easily pulled apart. You can check its doneness by shredding a piece; it should fall apart with ease.
- During the last 30 minutes of cooking, warm the flatbreads in a griddle or oven until soft and fluffy.
- Once cooked, let the souvlaki rest for about 10 minutes before serving. This allows the juices to redistribute.
- Serve the souvlaki on a large platter, topped with fresh parsley, alongside flatbreads and lemon wedges. You can also offer tzatziki as a refreshing dip.
