Ingredients
  

  • 300 g tofu
  • 250 g gluten-free pasta (e.g. rice noodles)
  • 150 g cucumber, julienned
  • 150 g sweet corn, canned or fresh
  • 2 tbsp sesame oil
  • 2 tbsp smoked paprika
  • 1 tbsp chili powder
  • 1 tsp salt
  • 2 tbsp fresh dill, chopped
  • 1 tbsp sesame seeds
  • Sliced radishes for added crunch optional
  • Chili flakes for extra heat optional

Method
 

  1. Drain and press the tofu to remove excess moisture. Cut it into bite-sized cubes.
  2. In a large pot of boiling salted water, cook the gluten-free pasta according to package instructions. Drain and set aside.
  3. In a skillet, heat the sesame oil over medium heat. Add the tofu cubes and sauté until golden brown on all sides, about 8-10 minutes.
  4. Sprinkle the smoked paprika, chili powder, and salt over the tofu. Stir well to coat and cook for another 2-3 minutes until fragrant.
  5. In a large mixing bowl, combine the cooked noodles, sautéed tofu, julienned cucumber, and sweet corn. Toss together gently.
  6. Finish with fresh dill and a sprinkle of sesame seeds. Divide into serving bowls and enjoy!
