- Preheat your oven to 170°C (340°F). Line a baking tray with parchment paper.
- In a mixing bowl, cream together the softened butter and granulated sugar using an electric mixer until light and fluffy, about 3-4 minutes.
- Add the orange zest and egg yolk to the mixture, continuing to mix until fully incorporated.
- In a separate bowl, whisk together the flour, salt, and baking powder. Gradually add this dry mixture to the wet ingredients, alternating with the fresh orange juice. Mix until the dough forms a soft ball.
- Chill the dough in the refrigerator for 30 minutes to help firm it up.
- Drop rounded tablespoons of dough onto the prepared baking tray, leaving space in between each cookie.
- Bake in the preheated oven for 12-15 minutes, or until the edges are just lightly golden but the centers remain soft.
- Remove from the oven and allow the cookies to cool on the tray for 5 minutes before transferring them to a cooling rack.
- Once cooled, sprinkle extra orange zest on top for garnish, if desired.
