  • Zest of 1 large orange
  • 1 large egg yolk
  • 300 g all-purpose flour

  • 1/4 tsp baking powder
  • 1 tbsp fresh orange juice
  • Extra orange zest for garnish optional

Method
 

  1. Preheat your oven to 170°C (340°F). Line a baking tray with parchment paper.
  2. In a mixing bowl, cream together the softened butter and granulated sugar using an electric mixer until light and fluffy, about 3-4 minutes.
  3. Add the orange zest and egg yolk to the mixture, continuing to mix until fully incorporated.
  4. In a separate bowl, whisk together the flour, salt, and baking powder. Gradually add this dry mixture to the wet ingredients, alternating with the fresh orange juice. Mix until the dough forms a soft ball.
  5. Chill the dough in the refrigerator for 30 minutes to help firm it up.
  6. Drop rounded tablespoons of dough onto the prepared baking tray, leaving space in between each cookie.
  7. Bake in the preheated oven for 12-15 minutes, or until the edges are just lightly golden but the centers remain soft.
  8. Remove from the oven and allow the cookies to cool on the tray for 5 minutes before transferring them to a cooling rack.
  9. Once cooled, sprinkle extra orange zest on top for garnish, if desired.
