- Preheat your oven to 180°C (350°F).
- In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the egg to the mixture and whisk until well combined.
- In a separate bowl, combine the flour, cinnamon, nutmeg, cloves, and salt. Gradually add this dry mixture to the wet ingredients, mixing until a dough forms.
- Roll out the dough on a floured surface and press it into the prepared tart pan, ensuring even coverage along the edges.
- Place the tart crust in the refrigerator for 15 minutes to rest, then bake in the preheated oven for 15 minutes until lightly golden.
- While the crust is baking, in a new bowl, mix together honey and coconut milk until well blended.
- Once the crust is baked, pour the honey-coconut mixture into the tart shell and return it to the oven for an additional 15 minutes or until set.
- Remove the tart from the oven; allow to cool slightly before sprinkling with toasted coconut flakes.
- Let the tart cool completely for 15 minutes before slicing. Serve with a drizzle of honey and fresh mint leaves if desired.
