Ingredients
  

  • 200 g all-purpose flour
  • 100 g unsalted butter, softened
  • 75 g granulated sugar
  • 1 large egg
  • 150 g honey
  • 100 ml coconut milk
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/4 tsp salt
  • 50 g shredded coconut, toasted

Method
 

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the egg to the mixture and whisk until well combined.
  4. In a separate bowl, combine the flour, cinnamon, nutmeg, cloves, and salt. Gradually add this dry mixture to the wet ingredients, mixing until a dough forms.
  5. Roll out the dough on a floured surface and press it into the prepared tart pan, ensuring even coverage along the edges.
  6. Place the tart crust in the refrigerator for 15 minutes to rest, then bake in the preheated oven for 15 minutes until lightly golden.
  7. While the crust is baking, in a new bowl, mix together honey and coconut milk until well blended.
  8. Once the crust is baked, pour the honey-coconut mixture into the tart shell and return it to the oven for an additional 15 minutes or until set.
  9. Remove the tart from the oven; allow to cool slightly before sprinkling with toasted coconut flakes.
  10. Let the tart cool completely for 15 minutes before slicing. Serve with a drizzle of honey and fresh mint leaves if desired.
