Ingredients
  

  • 200 g dried green lentils
  • 1 L water (for cooking lentils)
  • 200 g romaine lettuce, chopped
  • 100 g radishes, thinly sliced
  • 50 g fresh parsley, finely chopped
  • 2 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tbsp sumac
  • Salt and cracked black pepper to taste
  • Feta cheese, crumbled optional
  • Sliced avocado optional

Method
 

  1. Rinse the lentils under cold water. In a medium pot, bring 1 liter of water to a boil, then add the lentils. Cook for about 20 minutes or until tender but still slightly firm.
  2. Once cooked, drain the lentils and allow them to cool for about 10 minutes.
  3. In a mixing bowl, combine the chopped romaine lettuce and sliced radishes.
  4. In a small bowl, whisk together the olive oil, lemon juice, sumac, salt, and cracked black pepper to create the dressing.
  5. Add the cooled lentils to the mixing bowl with the lettuce and radishes. Pour the dressing over the salad and toss gently until well combined.
  6. Transfer the salad to a serving bowl, and top with fresh parsley, and additional cracked black pepper, if desired. Serve immediately or refrigerate for up to an hour before serving for enhanced flavors.
