Sumac Shrimp Sandwich with Cucumber

- In a mixing bowl, combine the shrimp with sumac, a pinch of salt, and pepper. Let it marinate for about 10 minutes to absorb the flavors.
- Heat the olive oil in a frying pan over medium heat. Add the marinated shrimp and cook for about 3-4 minutes on each side until they are pink and opaque. Remove from heat.
- Add the cooked green peas to the shrimp and toss to combine.
- Slice the sandwich rolls in half and lightly toast them in the pan or a toaster until golden-brown.
- Layer the sliced cucumber on the bottom half of each roll, followed by the shrimp mixture.
- Drizzle tahini over the shrimp and top with fresh herbs.
- Cap with the other half of the roll, cut in half to serve, and enjoy with the side salad of your choice.
