Equipment
Method
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for an additional 1 minute until fragrant.
- Add the ground beef to the skillet. Season with salt and pepper, then cook until browned, about 8-10 minutes, breaking it apart with a spoon.
- Once the beef is cooked, drain any excess fat, then add the canned diced tomatoes and green beans to the skillet. Stir in the chopped basil and cook for an additional 5 minutes, allowing the flavors to meld.
- Add the chopped spinach and stir until wilted, about 2 minutes. Adjust seasoning, if necessary.
- Toast the pita breads briefly in a toaster or on a hot skillet until warm.
- To serve, spoon the beef mixture generously over each pita, then sprinkle with chopped cilantro (and feta cheese if using). Enjoy warm!

Notes
Feel free to mix and match your greens; kale or swiss chard would also be fantastic in this dish.
Leftovers can be stored in an airtight container in the fridge for up to 3 days, and they reheat beautifully on the stovetop or in the microwave.
Get creative with the toppings! A drizzle of tzatziki adds a refreshing twist. Enjoy your cooking adventure!
