  • 400 g shirataka noodles
  • 240 g black beans
  • 100 g arugula
  • 100 g radishes
  • 50 g fresh parsley
  • 60 ml tahini
  • 2 cloves garlic
  • 1 tablespoon olive oil
  • 1 teaspoon dried basil
  • to taste Salt and pepper
  • for serving Grated parmesan cheese optional
  • for spice Crushed red pepper flakes optional

Method
 

  1. Begin by preparing the shirataki noodles according to the package instructions. Drain and set aside.
  2. In a large skillet over medium heat, add olive oil and minced garlic. Sauté for about 1 minute until fragrant.
  3. Add the black beans to the skillet, cooking for 5 minutes until heated through. Season with dried basil, salt, and pepper.
  4. Stir in the shirataki noodles and cook for another 3 minutes, mixing thoroughly.
  5. Once heated, remove from heat and let it rest for 5 minutes to allow flavors to meld.
  6. In a large serving bowl, layer the arugula and top with the noodle mixture.
  7. Scatter the sliced radishes and chopped parsley over the top. Drizzle with tahini just before serving. Enjoy!
