- In a mixing bowl, combine the ground beef, sweet corn, diced carrots, za'atar spice, olive oil, salt, and pepper. Mix well until all ingredients are thoroughly combined.
- Heat a frying pan over medium heat. Add the beef mixture and cook for about 10-12 minutes, stirring occasionally, until the beef is browned and cooked through. Ensure it reaches an internal temperature of 75°C (165°F).
- While the beef is cooking, warm the pitas in a separate dry frying pan or in the oven at low heat until they are soft and pliable, about 5 minutes.
- Once the beef is ready, remove it from the heat and let it rest for 5 minutes.
- Carefully cut each pita in half and stuff each half with the beef mixture.
- Serve with a simple side salad and drizzle with tahini sauce, if desired.

For a vegetarian twist, swap the beef for crumbled tofu or tempeh.
