Ingredients

  • 500 g ground beef
  • 150 g sweet corn (canned or frozen)
  • 100 g carrots, finely diced
  • 4 whole wheat gluten-free pitas
  • 2 tbsp za'atar spice blend
  • 2 tbsp olive oil
  • to taste Salt and pepper
  • for garnish Fresh parsley, chopped optional
  • for drizzling Tahini sauce optional
  • Side salad (lettuce, cucumber, and tomato) optional

Equipment

  • Frying pan (for sautéing pumpkin)
  • Chef's knife
  • Heatproof mixing bowl
  • Measuring spoons

Method

  1. In a mixing bowl, combine the ground beef, sweet corn, diced carrots, za'atar spice, olive oil, salt, and pepper. Mix well until all ingredients are thoroughly combined.
  2. Heat a frying pan over medium heat. Add the beef mixture and cook for about 10-12 minutes, stirring occasionally, until the beef is browned and cooked through. Ensure it reaches an internal temperature of 75°C (165°F).
  3. While the beef is cooking, warm the pitas in a separate dry frying pan or in the oven at low heat until they are soft and pliable, about 5 minutes.
  4. Once the beef is ready, remove it from the heat and let it rest for 5 minutes.
  5. Carefully cut each pita in half and stuff each half with the beef mixture.
  6. Serve with a simple side salad and drizzle with tahini sauce, if desired.

For a vegetarian twist, swap the beef for crumbled tofu or tempeh.
The pitas can be made ahead of time and stored in an airtight container for up to three days.
When reheating, just warm them in a frying pan to restore their classic texture.
