  • 200 g kidney beans, canned, drained and rinsed
  • 100 g arugula
  • 100 g kale, stems removed and roughly chopped
  • 120 g radishes, thinly sliced
  • 15 g fresh mint leaves, chopped
  • 3 tbsp tahini
  • 2 tbsp extra-virgin olive oil
  • 2 tbsp za'atar spice blend
  • Juice of 1 lemon
  • Salt and pepper to taste
  • 100 g Chopped cucumber optional
  • 50 g Feta cheese, crumbled optional

Method
 

  1. In a large mixing bowl, combine the arugula, kale, and radishes. Toss gently to mix.
  2. In a small bowl, whisk together the extra-virgin olive oil, lemon juice, za'atar spice blend, salt, and pepper to create the dressing.
  3. Pour the dressing over the mixed greens and vegetables, and toss well until everything is coated evenly.
  4. Add the rinsed kidney beans to the salad and gently fold them into the greens without mashing them.
  5. Transfer the salad to a serving bowl and sprinkle the chopped mint leaves on top.
  6. Drizzle tahini over the salad and serve on the side for an extra creamy touch.
