Ingredients
  

  • 300 g firm tofu, drained and pressed
  • 4 large whole wheat tortillas
  • 100 g fresh spinach
  • 150 g radishes, thinly sliced
  • 30 g za'atar spice blend
  • 60 ml olive oil
  • 1 lime, juiced
  • Sliced avocado optional
  • Crumbled feta cheese optional

Method
 

  1. Preheat your oven to 200°C (400°F).
  2. In a mixing bowl, combine za'atar spice blend with olive oil and lime juice to make the sauce. Set aside.
  3. Cut the pressed tofu into strips or cubes and toss them into the za'atar sauce until fully coated.
  4. Spread the coated tofu on a baking tray and roast for 20 minutes until golden and crispy, turning halfway through.
  5. While the tofu is roasting, prepare your radishes by thinly slicing them either with a knife or a mandoline slicer for uniformity.
  6. Heat a pan over medium heat. Warm the tortillas for about 1 minute on each side until soft.
  7. Assemble each wrap by placing a portion of spinach, roasted tofu, and radish slices on a tortilla.
  8. Fold the sides of the tortilla in and roll it up tightly. Cut in half diagonally for serving.
  9. Serve with a simple side salad and a lime wedge.
