Once melted, remove the pan from heat and add the sugar, vanilla extract, freshly ground black pepper, and sea salt. Stir until well combined.
Gently fold in the crushed digestive biscuits until fully coated with the chocolate mixture.
Using a tablespoon, scoop portions of the mixture and roll them into bite-sized balls. Place them onto a lined baking sheet.
Refrigerate the chocolate bites for about 30 minutes or until firm to the touch.
