- Preheat your oven to 180°C (350°F). Line a baking tray with parchment paper.
- In a mixing bowl, combine the flour, rolled oats, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt. Whisk together until fully mixed.
- In another bowl, cream the softened butter with the grated carrots until well combined. Add the egg and mix thoroughly.
- Gradually fold the dry ingredients into the carrot mixture until just combined. Avoid overmixing to keep the biscuits chewy.
- Using a spoon, scoop small portions of the dough onto the prepared baking tray, leaving space between each biscuit.
- Bake in the preheated oven for 15-20 minutes or until the edges are lightly golden and the center feels soft to the touch.
- Remove from the oven and let the biscuits rest on the tray for 10 minutes before transferring them to a wire rack to cool completely.
- Once cooled, spread a layer of fruit jam on top of each biscuit. Garnish with fresh mint leaves if desired.
