  • 75 g rolled oats
  • 100 g brown sugar
  • 50 g unsalted butter, softened
  • 1 large egg
  • 1 tsp baking powder

  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 100 g fruit jam of choice (e.g., raspberry, apricot)
  • Pinch salt
  • Fresh mint leaves for garnish optional

Method
 

  1. Preheat your oven to 180°C (350°F). Line a baking tray with parchment paper.
  2. In a mixing bowl, combine the flour, rolled oats, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt. Whisk together until fully mixed.
  3. In another bowl, cream the softened butter with the grated carrots until well combined. Add the egg and mix thoroughly.
  4. Gradually fold the dry ingredients into the carrot mixture until just combined. Avoid overmixing to keep the biscuits chewy.
  5. Using a spoon, scoop small portions of the dough onto the prepared baking tray, leaving space between each biscuit.
  6. Bake in the preheated oven for 15-20 minutes or until the edges are lightly golden and the center feels soft to the touch.
  7. Remove from the oven and let the biscuits rest on the tray for 10 minutes before transferring them to a wire rack to cool completely.
  8. Once cooled, spread a layer of fruit jam on top of each biscuit. Garnish with fresh mint leaves if desired.
