  • 200 g ripe bananas (about 2 medium bananas)
  • 150 g granulated sugar
  • 100 g unsalted butter, melted
  • 2 large eggs
  • 50 g cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 100 ml heavy cream
  • 100 g apple compote (store-bought or homemade) optional
  • 25 g chopped nuts (e.g., walnuts or pecans) for garnish optional
  • Powdered sugar for dusting optional

Method
 

  1. Preheat your oven to 180°C (350°F). Grease and line a baking pan with parchment paper.
  2. In a mixing bowl, mash the ripe bananas until smooth. Stir in the melted butter.
  3. Add the granulated sugar and mix until well combined.
  4. Beat in the eggs, one at a time, ensuring each is fully incorporated before adding the next.
  5. Sift in the flour, cocoa powder, baking powder, and salt. Gently fold the dry ingredients into the wet mixture until just combined.
  6. Carefully pour in the heavy cream, continuing to mix until the batter is smooth and creamy.
  7. Pour the brownie batter into the prepared baking pan, smoothing the top with a spatula.
  8. Bake in the preheated oven for 30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  9. Allow the brownies to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
  10. Serve each brownie topped with a spoonful of apple compote and a sprinkle of chopped nuts and powdered sugar, if desired.
