Ingredients
  

  • 200 g dark chocolate, chopped
  • 100 g unsalted butter
  • 150 g granulated sugar
  • 2 large eggs
  • 90 g all-purpose flour
  • 30 g cocoa powder
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 150 g mixed berries (strawberries, blueberries, raspberries)
  • 150 g cream cheese, softened
  • 50 g powdered sugar
  • 1 tsp vanilla extract
  • Additional mixed berries for garnish optional
  • Mint leaves for garnish optional

Method
 

  1. Preheat the oven to 180°C (350°F) and line the baking dish with parchment paper for easy removal.
  2. In a medium saucepan over low heat, melt the dark chocolate and unsalted butter together, stirring until smooth. Remove from heat and let cool slightly.
  3. In a mixing bowl, whisk together the granulated sugar and eggs until light and fluffy.
  4. Incorporate the melted chocolate mixture into the sugar and eggs until well combined.
  5. Sift in the all-purpose flour, cocoa powder, baking powder, and salt. Gently fold the mixture until just combined.
  6. Pour the brownie batter into the prepared baking dish and smooth the top with a spatula.
  7. In a separate bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth and creamy.
  8. Drop spoonfuls of the cream cheese mixture over the brownie batter and swirl gently with a knife to create a marbled effect.
  9. Scatter the mixed berries over the top of the brownie mix.
  10. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  11. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Cut into squares to serve.
