Ingredients
  

  • 200 g unsweetened chocolate, chopped
  • 150 g unsalted butter
  • 300 g granulated sugar
  • 150 g brown sugar
  • 4 large eggs
  • 2 tsp pure vanilla extract
  • 1 tsp vanilla bean paste
  • 200 g all-purpose flour
  • 50 g cocoa powder
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 100 g chopped walnuts
  • 200 g Granny Smith apples, peeled and diced optional
  • 50 g granulated sugar (for compote) optional
  • 1/2 tsp cinnamon optional
  • Whipped cream or ice cream for serving optional

Method
 

  1. Preheat your oven to 175°C (350°F). Grease the baking dish with butter and line with parchment paper.
  2. In a mixing bowl, melt the chopped chocolate and unsalted butter together, stirring until smooth. Allow to cool slightly.
  3. In another bowl, whisk together the granulated sugar, brown sugar, eggs, vanilla extract, and vanilla bean paste until well combined.
  4. Gradually add the chocolate-butter mixture to the egg mixture and mix until smooth.
  5. Sift together the flour, cocoa powder, baking powder, and salt. Fold it into the wet ingredients until just combined. Stir in the chopped walnuts, if using.
  6. Pour the brownie batter into the prepared baking dish, smoothing the top with a spatula.
  7. Bake for 30 minutes, or until a toothpick comes out with a few moist crumbs. Be careful not to overbake; we want that fudgy texture!
  8. While the brownies cool, prepare the apple compote. In a saucepan over medium heat, combine diced apples, granulated sugar, and cinnamon. Cook for about 10 minutes, stirring until the apples soften and the mixture is slightly syrupy.
  9. Let the brownies cool for about 15 minutes in the pan before cutting into squares. Serve each piece topped with warm apple compote.
